Baked Mozzarella Sticks
Super Bowl Sunday! It’s one of my favourite days of the year. I was fortunate enough to watch my Philadelphia Eagles win the Super Bowl a couple of years ago which was pretty darn amazing! Aside from the excitement of the game, commercials and the halftime show, there is the food. Enter in chicken wings, potato chips, and all the greasy deep fried goodness! One of my favourite appetizers is mozza sticks. Cheese? Good. Bread? Good. Deep fried cheese coated in breading? The best!
Today I’m sharing a recipe for a healthier version of baked mozzarella sticks!
Ingredients:
· 12 partly-skimmed mozzarella cheese strings
· 1 egg
· 1.5 tbsp oat flour
· 5 tbsp Italian seasoned breadcrumbs
· 5 tbsp panko
· 2 tsp parmesan cheese
· 1 tbsp parsley
· Olive oil cooking spray
1.Place cheese strings in the freezer
2. Line a baking sheet with aluminum foil and spray with cooking spray
3. Preheat oven to 400°F
4. In a small bowl or shallow dish, mix together bread crumbs, panko, cheese and parsley
5. Grind oats down into flour and place oat flour in a small bowl
6. In a separate bowl, whisk egg
7. Once cheese strings are completely frozen, dip them into the flour, then egg, then breadcrumb mix
8. Place the coated cheese strings on your baking sheet and spray the tops of the cheese strings lightly with your cooking spray
9. Cook for 5 minutes, flip and cook for an additional 5 minutes
10. Let the mozza sticks cool and enjoy!
